Erica B. Copping

1990 - 2025

It is with deep sadness that we announce the passing of Erica B. Copping (Lindsay) at the Moncton City Hospital  Moncton, NB on November 25, 2025, after a short battle with cancer.

Erica was born 1990 in St. Stephen, NB, the daughter of Danny and Lori Dempsey.  She married Brad Copping and was the loving mother of their two beautiful daughters; Arya & Lila.  She was the loving sister to Cody Dempsey and Micheal Roy.

Erica had a great work ethic.  Her first employment was at Lonicera Hall in St. Stephen at the age of 15.  This meant she could finally have the means for a cell phone.  When she went off to UNB, Erica worked as a waitress in fine dining restaurants in Fredericton, NB.

Erica was a fierce competitor in everything she did.  Her love of the New England Patriots led to a lot of banter and teasing on Sunday afternoons.  She was always so proud of herself when she beat the men in their fantasy football leagues.

In her teens, Erica loved to compete in pageants and carried the skills she learned into her adult life.  She had great interview skills which allowed her to stand out and be so successful.  Through her competitions, Erica made friends all over Canada and the USA.  She competed in pageants at the Provincial and National level.  Her family was so very proud when she was selected as Miss Teen New Brunswick 2007 and went on that same year to compete in the Miss Teen Canada pageant in Mississauga, Ontario where she placed as the 2nd runner up.  She also represented Canada on the stage at Disney World in Orlando, Florida competing as Miss Canada Collegiate 2013.

Erica was the devoted wife and best friend to Bradley Copping.  They met in 2009 and have been inseparable ever since.  They married in Oak Bay, New Brunswick in 2016.  They created endless memories together.  They enjoyed travelling, cooking, camping in their travel trailer, home renovations, spending time with family, close friends and snuggling with their lifelong furry friend, their golden retriever; Jaba.  They spent a month in Bali for their honeymoon, they travelled across Canada and the United States and were planning future trips with their children.

She and Brad eventually headed out West to Fort McMurray, Alberta where she found her niche in interior decorating.  She had an eye for colors, texture and style.  She loved to bring a vision to reality and was so excited to see her projects to completion.

After having her children and settling back in New Brunswick, Erica proved again how diverse her talents were.  She joined the sales team at Taylor Ford Lincoln in Moncton, where in her first year, her sales efforts earned her the Atlantic Canada Rookie of the Year award; a first for Taylor Ford.

Above all, Erica was most passionate about being the mother to her two beautiful daughters, Arya and Lila.  She found joy in the little moments.  From night-time snuggles before bed or listening to the sweet sound of their laughter while they played, or by teaching them how to comb their hair, she has left an everlasting impression on her daughter’s lives. “I love you through and through, yesterday, today and tomorrow too!”

Erica is survived by her husband; Bradley Copping, their daughters; Arya & Lila Copping, her parents; Danny & Lori Dempsey, brother; Cody Dempsey,  grandmother; Janice Lindsay, grandparents; Cheryl and Jim Dempsey, brother and sister-in law; Luke and Lianna Copping, mother-in law; Katherine Arseneau, father-in-law; Desmond Copping and many beloved Aunts, Uncles, cousins and dear friend Katie Curran.

She is preceded in death by her grandfather; Charles (Buddy) Lindsay and grandmother; Judith Crosby.

Erica’s outgoing personality and passion touched everyone who knew her. Though she will be deeply missed, her legacy lives on in her girls and the love she had for her family and friends.

Resting at The S. O. Mehan & Son Funeral Home 23 Main Street St Stephen, NB where family will receive friends on Sunday, November 30, 2025 from 5pm - 7pm. Funeral service will be held at the funeral home on Monday, December 1, 2025 at 2 pm.

Interment at the Scotch Ridge Cemetery Scotch Ridge, NB.
